AJAX Chat are one of the most popular ajax applications overall, I found many chat implementations using AJAX including a tutorial that I didn't publish yet. AJAX CSS Popup Chat is another AJAX chat application that implement one to one chat using popups, you can download the source and give it a try. It's very easy to install and use.

Someone asked me about IRC Chat with AJAX, this could be a very good example to start, in addition that there is many libraries that could be used for IRC and written in PHP such SmartIRC. It won't be difficult to implement, just that I left IRC about five years ago so I don't think I'll be back to use it again even with AJAX.
